FOOD PRESERVATION
Methodology
Our cuisine is rooted in artisanal preservation practices. Techniques of curing, hot and cold smoking, pickling, culturing, and fermenting are staple processes of the food we serve. Chef Jonathan is a culinary scientist and artist. He draws out complex flavors and creative combinations while maintaining the integrity of each ingredient.
Made from Scratch
We craft as much as possible from raw ingrdients. The technique that takes the most knowledge and point of view is curing. Our charcuterie installations offer a vast array of cuts and deliver distinctive old world flavors.
Sumptuous Desserts
From the luscious layers of our pot de créme, to the sharp tang of a raspberry lemonade bar, our tantalizing offerings will satisfy your sweet tooth.

Cirque du Soleil
Opening Night Receptions performed in San Francisco.
Vau de Vire Society
The Soiled Dove, an immersive dinner theater of burlesque and acrobatics telling the famed story of San Francisco’s Barbary Coast.
ENGAGING INSTALLATIONS
The Sake Make River
A series of slates undulating with an array of maki rolls, stunning vegetables and delicious dips. Weaving through the food is a menagerie of rock, moss and pebbles leading to a stream of flowing chilled sake.
IMMERSIVE CONCEPTS
Yoko Ono Event - SFMOMA
Guests participated in creating a vertical art installation by taking a scallop skewered with a nail. When finished with the scallop, they placed the nail on a mobile human canvas.
